Fennel, Favas & The Grit City Gala

Along with round two on Favas, we're harvesting Fennel this week.  Sweet, aromatic and delicious, Fennel is something we look forward to several times a year.  Not sure whether or not you're looking forward to it? In addition to incorporating Fennel into seasonal salads at this point in the year, I highly recommend grilling or caramelizing it with one of your Walla Walla Sweets.  The flavors meet in the middle and make for a great addition to burgers, sandwiches or even pizzas and risotto.  So, I hope you'll look forward to seeing it on the CSA and Farmers Market tables this week.

On the topic of Farmers Markets, I'd like to extend an invitation your way to join me at my table for the 2018 Grit City Gala:  An Urban Street Feast Supporting Tacoma Farmers Market on the evening of Thursday, August 16th.  The event will take place right on Broadway between 9th and 11th downtown (yep, right where that awesome vibrant market takes place each week), and it will feature farm-fresh local food prepared by Tacoma's finest chefs, bountiful beverages, music, good times and good folks like you!

SPRING FAVA BEAN & FENNEL SALAD
Simply Recipes

  • 2-3 lbs fresh fava beans, yielding about 1 1/2 to 2 cups shelled beans
  • Salt
  • 1 small bulb fennel, thinly sliced 
  • 2 ounces Parmesan cheese, thinly sliced
  • 10 fresh mint leaves, thinly sliced (chiffonade by stacking leaves and rolling them into a cigar shape, cut thin slices from the end)
  • 2 scallions (green onions), sliced
  • Extra virgin olive oil
  • Lemon juice
  • Freshly ground black pepper

SWEET ONION RISOTTO WITH SAUTEED KALE
Cooking Light, Cook Once — Eat Three Times! 

  • 3 cups water
  • 2 1/4 cups uncooked short-grain brown rice
  • 3 cups unsalted chicken stock (such as Swanson)
  • 1/4 cup olive oil, divided
  • 3 cups chopped sweet onion
  • 3 tablespoons chopped garlic
  • 1 cup dry white wine
  • 5/8 teaspoon kosher salt, divided
  • 5/8 teaspoon black pepper, divided
  • 2 ounces shredded Gruyère cheese (about 1/2 cup)
  • 3 1/2 cups chopped Lacinato kale
  • 1/4 cup golden raisins
  • 1/4 cup chopped pecans, toasted
  • 1 teaspoon white vinegar

POTATO SALAD WITH FAVA BEANS & FENNEL

  • 1 pound waxy boiling potatoes (such as red, new, or fingerling), scrubbed
    1 pound fava bean pods, shelled (about 1 cup)
    1 small fennel bulb, thinly sliced (about 1 cup)
    2 tablespoons chopped fennel fronds
    2 tablespoons chopped chives
    3 tablespoons extra virgin olive oil
    1 tablespoon lemon juice
    1 teaspoon lemon zest
    Salt
    Freshly ground black pepper

  • 1 bulb fennel, halved and cut into 1/2-inch wedges
  • 5 slices pancetta
  • 2 cloves garlic, minced

  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 5 ounces (about 6 to 7 cups) mixed salad greens

  • 1 cup pitted and quartered cherries, preferably a good red variety
  • 1/4 cup thinly shaved fennel
  • 2 tablespoons minced flat-leaf parsley
  • 1/2 ounce crumbled feta
  • 1 tablespoon sunflower seeds
  • 2 tablespoons olive oil
  • 1 tablespoons lemon juice
  • 1 teaspoon lemon zest

  • Olive oil as needed for brushing
  • 1/2 pound sweet cherries, pitted and halved (1¼ cups once halved)
  • One tablespoon balsamic vinegar
  • Kosher salt and freshly ground black pepper
  • Six salmon fillets, about 6 or 7 ounces each
  • Kosher salt and freshly ground black pepper

Sweet Summer Days Ahead — Walla Wallas, Rainier Cherries & Berries for the CSA

SWEET SUMMER DAYS AHEAD

While some of the crew is planting Pie Pumpkins this afternoon, the rest are picking the first real round of berries for the year.  We're probably not dealing in flats for now, but we want to make sure that our CSA will have first dibs on a modest amount of something red, gold or blue when they pick up shares this week.  This has been an atypical year in terms of harvest timing thus far. Blueberries have ripened before red raspberries, and be still my heart, we even picked a small round of cherry tomatoes from the open field this morning.  


As we head into the holiday week, sure to check out changes to our Wednesday, July 4th pickups.  All of our other farmstand hours and markets are business as usual.  If you need to make changes to your normal pickup this week, be sure to reply to this email and let me know ASAP.

INDEPENDENCE DAY CSA PICKUP CHANGES

On Wednesday, July 4th, 2018  our farmstand will be CLOSED to the general public for shopping but open for self service CSA pickup ONLY beginning at10am and 2pm (closing early).  The store will NOT be staffed or stocked for shopping on the 4th, but the share tables and refrigerators will be set up for pickups as usual.    

For our Browns Point members, North 47 Brewing Company will be closing up early at 6pm on Wednesday.  Dana has offered to get shares to the brewery an hour early, so please plan to pick up between 3 and 6pm this week.  Thanks!

If you typically pick up on Wednesday and would like to still do some extra shopping with us that week, we encourage you to come on Tuesday between 12-7 or you must let us know in advance if you'd prefer to shift your pickup to the Friday/Saturday roster over the holiday week--same goes for you travelers out there:)  Thank You and have a wonderful holiday!

GRILLED ROMAINE SALAD
Simply Recipes

  • 3 to 4 romaine hearts
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar (or cider vinegar)
  • 2 teaspoons chopped fresh herbs such as rosemary, thyme, oregano (or 1 teaspoon dried mixed herbs)
  • 1/4 teaspoon salt
  • Pinch freshly ground black pepper

  • 1 Walla Walla Onion
  • 2 cups buttermilk
  • 1 cup all purpose flour
  • 1/2 cup Panko breadcrumbs
  • 1 tsp onion salt
  • vegetable oil for frying

Basil Buttermilk Dip

  • 1/2 cup buttermilk
  • handful of fresh basil leaves  (can sub in Parsley & Mint if basil is unavailable-Kt)
  • squeeze of lemon juice
  • salt and pepper to taste
